Millionaire's Bacon

8 ounces Linden Grange thick-cut bacon
2 Tablespoons maple sugar
2 Tablespoons coconut sugar
1/2 teaspoon chili powder
1/2 teaspoon ground cinnamon
1/8 teaspoon fine sea salt
1/8 teaspoon red pepper flakes
Preheat oven to 400°F. Line a rimmed baking sheet with parchment paper and place a wire rack on top.
Arrange the bacon in a single layer on the rack with no space between them.
In a small bowl, combine both sugars and spices. Sprinkle the mixture over the bacon, covering each slice completely.
Bake until the sugar is melted and the bacon is brown and shiny, 20 to 25 minutes. Let cool on the rack for about 5 minutes.
Note: You may try substituting 2 Tablespoons of brown sugar for either of the sugars.
