Chicken Noodle Soup

1 tablespoon olive oil
1 pound carrots, sliced
1 cup chopped celery
1/2 medium onion, chopped
1 teaspoon dried oregano
1/2 teaspoon basil
Salt and pepper, to taste
2 cloves garlic, minced
4-6 cups chicken broth, depending on how you brothy you want it
8 oz egg noodles
1 Linden Grange chicken - roasted and meat shredded
Heat oil in a large pot over medium-high heat. Add carrots, celery, onion, oregano, basil, salt and pepper. Cook and stir until vegetables have softened, 6 - 8 minutes.
Stir in garlic and cook for 1 minute.
Add chicken broth and bring to a boil. Add noodles, cook for 5 minutes.
Gently stir in chicken and simmer until noodles are tender and chicken is heated through, 2 - 3 minutes.
